Sunset soup

4 roasted peppers,  4 cooked tomatoes, 5 tablespoons salt,  2 tespoons sugar, 1/2 cup milk, 1/2 cup cream, 1 cup water. Blend all together in blender Pour in a pretty white bowl add A sprig orgerano grate your favorite cheese 
 And enjoy :)

Ana's Monday Chicken Salad

If you have leftover chicken, take pieces of it and set aside. Start chopping romaine lettuce, slice the tomatoes and one red onion. What makes this salad special is my honey mustard dressing. You have four tbspoons of good olive oil, six tbspoons of melted butter, two tbspoons of good gourmet mustard, four tbspoons of honey, and 3 tbspoons of champagne vinegar. Salt + pepper. Beat well and pour!





The Pons Salad

The Pons salad was made when Ana came to spend several weeks with me in Atlanta. She comes from Spain and this is a special salad that Spanish families do. The recipe is the following (for 4 people)

-4 potatoes
-4 eggs
-3 carrots
-12 olives
-3 slices of Kosher pickes chopped
-8 tbspoons of olive oil
-1/2 a cup - 1 cup of mayo
-1 pound of shrimp OR 1 pound of fresh tuna
-chopped parsley
-5 tbspoons of calantro
-1/2 frozen pease




We boil potatoes and eggs. Meantime, chop ingredients and put them in the bowl. Everything should be chopped pea size. Mash potatoes and chop the egg. Mix all with the mayo and olive oil. Cover and refrigerate for one hour. It can be served as an appetizer. I love this salad with cold champagne, or a nice glass of chardonnay, or just a plain old fashion martini. Yummy Yummy! You are going to love this salad, and please share it with the man in your life, because my husband loves it or the woman in your life! :)

Shirley Poo's Pancakes




So many people love my pancakes! And they're so easy to make. Seven to ten minutess to make them, and they're absolutely light and delicious.

-1 1/2 cups of flour 
-2 tspoons of baking powder
-1/2 tspoon of salt
-1 tbspoon of sugar
-1/2 cup sour cream
-1/2 cup of milk

In a separate bowl, beat 2 eggs, sour cream, and milk. Beat well. Add vanilla and the wet ingredients to dry ingredients. Stir ONLY until blended, don't overbeat or they be tough. Take a half of a cup of pancake mixture and pour onto the pan until bubbly, then flip, only once!, until golden. Serve with syrup or butter or salt and pepper, as my friend Eileen does.

Grandma's Chocolate Cake

I've been asked for the recipe, so here it is:

1 3/4  of flour
3 tspoons of baking powder
1/4 tspoon of salt
1 tspoon of cinnamon 
1 1/2 cups of sugar
4 egg yolks 
4 ounces of unsweetened chocolate
4 ounces of sweetened chocolate
1 1/2 cups of buttermilk
1/2 cup of butter
1 tspoon of vanilla

Melt the chocolate, cream your sugar in a mixture, add egg yolks one at a time, beating very well after each egg. After the chocolate cools down, you add the melted chocolate to your sugar and egg mixture. Add vanilla, buttermilk, and the rest of the dry ingredients (flour is a dry ingredient). Beat well and in a separate bowl, take the egg whites and beat until fluffy. Fold in the egg whites into the mixture. Pour into two greased inch baking pans and bake 20 mins- 30 at 350. To make icing, melt two ten ounce block of good dark sweetened chocolate, then add 2/3 cups of butter, adding a little bit of heavy whipping cream to loosen the chocolate.

Happy Dish For Gloomy Days
















Meatballs

-Half a pound of pork meat
-Half a pound of Italian sausage
-Chuck beef
-3 clows of garlic
-1 chopped onion
-1 bunch of parsley
-2 eggs
-Half a cup of milk
-Half tsp of smoked paprika

Combine all ingredients with your hands and cook them in olive oil until they're golden. Place in the meat sauce. The tomato sauce is made by me, if you want the recipe just leave a comment. This joins perfectly with a simple crispy romaine salad.

The Ana Cheescake

This cheesecake was inspired by my little beautiful Spanish daughter. I call it "The Ana Cheesecake" It's pretty and sweet and everything nice. 

-3 Pounds of Philadelphia
-9 eggs
-2 tbspoons of vanilla
-1 1/2 cups of sugar
-2 lemons
-2 cups of grind almonds
-1 cup of gram cracker 
-6 tbspoons of butter
-1 cup of sour cream



To prepare crust mix your sugar and butter and you stir it up and star to press it into a eight inch spring form pan. Set in the fridge for half an hour. To make your cheesecake put in your cream cheese  and whip it until it's light and fluffy. Add eggs, sugar, vanilla, sour cream and continue mixing. Last, take the zest of two lemons (2 tbspoons) bake for 15 minutes at 350, then turn the oven down to 250 and bake for one hour. Then let it sit in the open oven for half and hour. Then let it cool and put it in the fridge

Getting-ready-to -go-out-to-drink dinner

This is a dinner that you have when you've had a very light lunch. It consists of a ribeye steak. Steamed fresh asparagus, 2 boiled potatoes (servings: 3) cut in quarters with a tbsp of salt in the water , a teaspoon of butter after the potatoes are cooked. Stir the potatoes with salt and pepper and chop garlic. Serve on the plate with drizzled olive oil. The steak is grilled seven minutes on each side (6 ounce steak) I steamed the asparagus for 3 minutes and drizzled butter and olive oil over them. Finally we shredded parmesano onto them.  For a side dish I sliced three tomatoes with a little fresh basil and then drizzle a little olive oil and seasalt.

Recent Dishes


There's nothing more wonderful than getting up in the morning watching the sun come up and having blueberry with little pieces of bacon that gives you saltiness and then the sweetness of the scones and coffee. 


                      


Most people think that making scones is difficult. But this recipe is very easy. I got it from my very good friend Eileen, so I'll call them the Eileen Scones 
-2 cups of all purpose flower
-2 tspns baking powder
-1/2 tspn of salt
-1/3 cup of sugar
-1 1/2cup of whipping cream
- a pound of  fresh blueberries
You combine all the dry ingedients, stir in the whipping cream and start to form a ball with your dough. After your dough is all pulled together, you start to kneed it into a ball, not too much, just enough to get a nice firm ball. Then start to roll it out and cut out in triangular squares. This recipe will make eight of them. Then place the blueberries in the scones. Melt a tbspoon of butter and brush it in the scones. Bake it 350 for 17 minutes. 




A good way to prepare your bacon is to put it in the oven and let it cook very slow while you're preparing the rest of your breakfast. I call it No Mess Bacon

Sometimes for dinner you want to go light, but not too light. This I find a very healthy but somewhat light dinner. The ingredients are:


-1 pound of shrimp
-1/2 pound  baby fresh spinach
-1/2 pound fresh sliced mushrooms
-1 red pepper

Marinate the shrimp and garlic and a very good olive oil and a little seasalt and pepper. Let that set for 20 minutes while you prepare the pasta and chop the mushrooms and the red pepper. Saute the red pepper, mushroom and then put in the shrimp and the pour over the cooked pasta and finally the hot spinach, which will cook over the pasta. And voila, here we have Ana's Pasta Dish
